If you’re like me, you’ll often find that you’re in a hurry, and need to grab a quick, nutritious snack for the road. What’s more, now that we’re heading into winter, you’d probably like something piping hot. When you’re out of leftovers, you can’t go past this tasty egg jaffle.
Whack your bread on the jaffle maker, crack an egg into the middle, add some Worcestershire sauce and a slice of cheese, and you’re good to go! You need to cook it until the bread is just starting to get burnt, so that the egg is done to perfection. If you don’t like really toasted bread, use something heavier that won’t burn as easy.
Best of all - no washing up!

The other day I purchased a 1kg packet of roo mince - on special for $5. I had been tossing up between making bolognaise, burritos or some kind of pie, but finally I settled on the ultimate kangaroo cuisine - rissoles!
Ingredients:
- 1 kg Kangaroo Mince
- 2 onions
- 6 cloves of garlic
- 100g or so Breadcrumbs
- 1 egg
- Mint
- Cayenne Pepper
- Chilli Oil
- Worcestershire Sauce
- Salt
- Pepper
Method:
- Chop up the onion and garlic, and mix in with the mince. Use your hands, it makes things a lot easier.
- Whack in half the breadcrumbs and mix up some more. Then add an egg, and the rest of the breadcrumbs. Knead it in good.
- At this point, you want to add some spices. I used the ones above - a good dash of worcestershire sauce, lots of mint which was quite good with the roo, and of course plenty of cayenne pepper. You can change the spices if you like - if you find any good ones that go with kangaroo, post them in the comments. Salt, pepper and a bit of chilli oil round off the rissoles nicely. Give it all a good kneading.
- Cook ‘em. The rissoles are quite moist compared to beef, and of course a bit of tomato sauce never goes astray. Try them without first - you might be surprised!
Last my turn to cook mega meals wednesday, so here is my recipe for beef vindaloo.
RULES
- Get some garlic, turmeric, giner, cloves, chillis, cardamon, peppercorns, cinnamon, coriander, cumin and lemon juice. Blend it up until maximum goodness is achieved.
- Buy some cheap steak. Chop it up small and brown it a bit at a time.
- Whack it all together and cook for a couple of hours.
- Serve with pappadams, rice and lager.

baby octopus a la stu
ingredients:
- 400g baby octopus
- juice of 1 lime
- 3 hot red chillies, chopped (not to be confused with red hot chili peppers)
- a handful of coriander, chopped
- rice
- peanut oil
now, whack the octopus, chillies, lime juice and coriander in a bowl and marinate. go watch some telly or something. i watched the simpsons and ate an ice block. splices are the best, but anything will do really. after an hours or so everything should be soaked in. heat up some oil in a wok (get it mega hot), and then whack in the contents of your bowl, and fry it for a while. half-cook some rice and whack that in as well. the rice will soak up all the oil, juice and chilli and turn a kind of pinkish colour. then, when everything is ready, you can whack it in a bowl and eat. i suggest having a good lager to complement this meal, as it’s slightly spicy. i inadvertantly cracked open a ginger beer last night, which was probably a mistake, but it could have been worse - i’ve got some chilli beer in the fridge that i don’t think would complement spicy food very well. and there you have it. octopus for one. approximate cost: $5. time to make: about 10 minutes of actual cooking, an hour or so marinating. enjoy.
